Ingredients
Roughly chop the onions, jalapeno and garlic. Place in a food processor with the slicing blade.
Chop the tomatoes into quarters
Slice all the tomatoes in the food processor
Heat the oil in a pot and then add the sliced onions, garlic and jalapenos
Fry for about 5 minutes on medium high heat until they start to brown
Add all the tomatoes to the pot along with 3 cups of water or broth (no salt)
Add all the remaining ingredients
Simmer covered for about 45 mins. Remove from heat and then cool
Chop the cilantro
Pour the soup into a blender and set to puree
Pour the soup back into the pot and add the cilantro
Simmer for 10 mins
Serve with fresh ground pepper and bread
