Instructions
Measure the spices
Chop the lauki, tomatoes and onions
Soak the dal in a cup
Turn on the instant pot to saute medium. After it warms up add in the oil
Add the mustard seeds and asafoetida. The seeds will sputter
Add in the onions and garlic. Cook for a few mins
Add in the tomatoes and all the spices
Cook for 3 minutes
Rinse the dal and add to the pot. Add in the lauki and 1/2 cup water
Mix everything in the pot
Set the instant pot to pressure cook for 15 minutes. Let the pressure release naturally
Lauki Dal is ready. Check the consistency and see if you like it more dry (saute on low) or wet (add little bit of water)
