Ginger Chicken

If you like ginger you will love this spicy ginger chicken!

Ingredients
  

  • 1.5 lb Boneless cubed chicken thigh or breast
  • 2 tbsp Cooking Oil
  • 2 cups Diced Tomatoes (about 3 to 4)
  • 1.5 cups Diced Onions (1 large)
  • 2 tbsp Ginger Paste
  • 1 tbsp Crushed Garlic
  • 1 Jalapeno Pepper diced
  • 2 inch Ginger Julienned
  • 1 tsp Kashmiri Chili Powder
  • 1 tsp Ground Black Pepper
  • 1/2 tsp Salt adjust to taste
  • 1/2 tsp Turmeric
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala
  • 1 tsp Soy Sauce
  • 1/2 cup Greek Yogurt whipped at room temperature

Garnish

  • 1/2 Jalapeno Pepper Julienned
  • 1 inch Ginger Julienned
  • Cilantro

Instructions
 

  • Cut all the ingredients

  • Heat oil in a pot and fry the onions on high for 5 mins
    Fry Onions
  • Add the ginger and garlic.
  • Continue to fry for 2 mins
  • Add in all the chicken and fry on medium high for 10 mins
  • Add all the spices and soy sauce
  • Cook for a few mins
  • Add in the tomatoes
  • Cook for about 10 mins on medium until the tomatoes are mushy
  • Add in the julienned jalapenos and ginger
  • Cook for 5 minutes
  • Add in the whipped yogurt. Stir while adding.
  • Simmer covered for 5 mins
  • Garnish with cilantro and ginger
