Wash the meat and dry in paper towels
Mix all the spices in a bowl
Rub the liquid smoke into the meat. Then rub in the olive oil. Sprinkle the spice mix evenly over the meat
Cover the blow with a plastic wrap and place in the fridge for 2 hours
Preheat the over to 250 F
Place the meat on to a foil lined tray
Cover the tray with foil. Try to seal it completely
Place the tray on the middle rack. Bake for 3 hours. If you have a thicker cut, add 30 minutes
After the bake time, remove from oven
Brush on your favorite BBQ sauce.
Set the oven to broil
Place the try back into the over and let it broil for 2-3 minutes.
The chops or ribs are ready to serve!
