Anju's Sarson ka Saag (Mustard and Spinach Greens)
I was at my friend's (Harsh) house and Anju gave me a togo box of Saag. Went home and tried it with naan and it was amazing. I had to get the recipe. I tried twice and it did not turn out as good. This the the documented third try and was approved by Anju!

- 16 oz Yellow Onion
- 12 oz Mustard Greens
- 12 oz Spinach Greens
- 2 inch Ginger
- 14 cloves Garlic
- 1 Jalapeno Pepper
- 15 Cashew
- 2 tbsp Mayo
- 2 tbsp Cooking Oil I use coconut oil
- 1/2 tsp Salt adjust to taste
Blanch and blend the greens
Roughly chop the mustard greens and spinach and add to a pot with half a cup of water. Cover and let it steam for a few mins
In the mean time create an ice water bath
Greens should be done in a few mins
Pour the greens into the ice bath and let it sit for a minute
Strain the greens in a colander. Save some of the water for blending
Add the greens to a blender with half a cup of the strained water. Use more if needed
Blend until it becomes a smooth paste.
Fry and blend other ingredients
Roughly chop the remaining ingredients
Heat a pot, add cooking oil and the ingredients
Fry until the mixture starts to turn brown
Let the mixture cool for about 10 - 15 minutes and add to a blender with half a cup of water
Blend to a fine paste
Finalize the Saag
Add the brown paste to a pot
Fry for a few minutes until it starts to release a little bit of oil
Add the blended greens along with the Mayo and salt. Mix and simmer for 10 minutes
Ready to serve with naan bread
