Mom’s Tomato Soup
Mom’s Tomato Soup
My mom has always made this soup. This time I documented the recipe so that I could make it myself. Enjoy!
Ingredients
- 3 lb Tomatoes
- 1 Red Onion ~ 8 oz
- 1 Jalapeno pepper
- 10 cloves Garlic
- 2 tbsp Cooking Oil
- 1 tbsp Soy Sauce
- 1 tsp Kashmiri Chili Powder
- 3 tbsp Ketchup
- 1 tsp White Vinegar
- 1 tsp Brown Sugar
- 1 tsp Salt
- 3 cups Water or Vegetable Broth (skip salt if using broth)
- 3 tbsp Fresh Chopped Cilantro
Instructions
- Ingredients
- Roughly chop the onions, jalapeno and garlic. Place in a food processor with the slicing blade.
- Chop the tomatoes into quarters
- Slice all the tomatoes in the food processor
- Heat the oil in a pot and then add the sliced onions, garlic and jalapenos
- Fry for about 5 minutes on medium high heat until they start to brown
- Add all the tomatoes to the pot along with 3 cups of water or broth (no salt)
- Add all the remaining ingredients
- Simmer covered for about 45 mins. Remove from heat and then cool
- Chop the cilantro
- Pour the soup into a blender and set to puree
- Pour the soup back into the pot and add the cilantro
- Simmer for 10 mins
- Serve with fresh ground pepper and bread
