Ingredients
  

  • 2 lb Lauki (Opo Squash)
  • 2 Roma Tomatoes
  • ½ Onion
  • ½ cup Channa Dal
  • 1 tbsp Cooking Oil
  • ¼ tsp Mustard Seeds
  • ¼ tsp Asafoetida  optional
  • 1 tbsp Garlic Paste
  • ½ tsp Salt
  • ½ tsp Turmeric
  • 1 tsp Cumin Powder
  • 1 tsp Brown Sugar
  • 1 tsp Kashmiri Chili Powder
  • ½ cup Water

Instructions
 

  • Measure the spices
  • Chop the lauki, tomatoes and onions
  • Soak the dal in a cup
  • Turn on the instant pot to saute medium. After it warms up add in the oil
  • Add the mustard seeds and asafoetida. The seeds will sputter
  • Add in the onions and garlic. Cook for a few mins
  • Add in the tomatoes and all the spices
  • Cook for 3 minutes
  • Rinse the dal and add to the pot. Add in the lauki and 1/2 cup water
  • Mix everything in the pot
  • Set the instant pot to pressure cook for 15 minutes. Let the pressure release naturally
  • Lauki Dal is ready. Check the consistency and see if you like it more dry (saute on low) or wet (add little bit of water)
  • Ready to serve
