Very easy to make and bake.

Equipment

  • 1 6 Cup baking dish

Ingredients
  

  • 5 Eggs
  • cup Onions Diced
  • 2 Tomatoes One for the base and one for topping
  • ½ tsp Chili Flakes
  • 1 tsp Garlic chushed
  • cup Basil (chopped and packed)
  • 3 oz Shredded Cheese of your choice
  • ½ cup Milk I use 2%
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 350℉
  • Beat the eggs in a large bowl
  • Chop all the ingredients. One tomato should be deseeded and chopped. The seeds you can chop and added to the beaten eggs
  • In a sauce pan, sauté the onions, garlic and chili flakes. Add salt and pepper to taste
  • Remove the pan from the stove. Stir in the tomatoes and basil
  • In a greased baking dish, layer the onion mixture at the bottom
  • In the beaten eggs, add the cheese, tomato seeds, milk, salt and pepper to taste. Mix well.
  • Carefully pour the egg mixture into the dish
  • Top with a sliced tomatoes
  • Bake for 50 minutes
  • Remove from oven and let it rest for 10 minutes before serving
